Hey! It's been a while :) Here's how my last exam went where I had to serve the 3 following dishes - Chicken Fricasse with mushrooms, Lamb saddle with herb persilade & pork chop in a charcuterie sauce. I had about 7 hours to prep all the products from raw cuts; starting from rendering fats, making the various meat jus and preparing all the garnishments.
