Every step in the evolution of cooking—from man’s discovery of fire to the development of modernist techniques—is part of the history of culinary technology. In the ICE Culinary Technology Lab, we’re bridging the gap between ancient and modern techniques.
The act of cooking began with fire, and we feature some pretty impressive flames in our Culinary Technology Lab. The two most striking pieces of equipment in the lab are the Wood Stone Vertical Rotisserie and the Wood Stone Hearth Oven, with their 24-inch column and 800+˚F walls of fire, respectively.
In the lab, students also learn about traditional cooking techniques from around the world with our state-of-the-art indoor tandoor oven and electric plancha grill.
Last but not least, our lab boasts cutting edge equipment reflecting contemporary culinary advancements, including sous vide technology, whipping canisters, dehydrators, Vitamix blenders and more.

So our practical classes are every Tuesdays, then Wednesdays are theory online classes only. Practical class is a whole day affair, class starts at 8:30am, we’re there by 8am and it lasts sometimes until 7pm. But honestly, you wouldn’t even feel it’s been that long. It’s so much fun, you’ll surely learn a lot, it’s at a really nice location and the equipment we use are top notch! 🥇

It's been a while :) Here's how my last exam went where I had to serve the 3 following dishes - Chicken Fricasse with mushrooms, Lamb saddle with herb persilade & pork chop in a charcuterie sauce. I had about 7 hours to prep all the products from raw cuts; starting from rendering fats, making the various meat jus and preparing all the garnishments.
